Baked Tuscan Chicken Casserole

Ingredients
- 2 ea chicken breasts, sliced horizonatally
- 6 oz frozen chopped spinach, thawed, squeezed dry
- 3 oz cream cheese, softened
- 1/3 C heavy cream
- 4 cl garlic, minced
- 1/4 t salt
- 1/2 t onion powder
- 1/4 t chili powder
- 1/4 t black pepper
- 1 t Italian seasoning
- 1/3 C Parmigiano, grated
- 8 oz sun-dried tomatoes, drained, chopped
- 1 T sun-dried tomato oil
- 3/4 C mozzarella, grated
- 1 T fresh parsley, chopped
Instructions
- Beat together the cream cheese, heavy cream, 2 cl garlic, salt, onion powder, chili powder, pepper, Italian seasoning, Parimgiano, and 3/8 C mozzarella, then mix in the spinach.
- Lay the chicken breasts in a large greased baking dish, season with additional salt and pepper and the remaining garlic. Spread the cheese mixture on the breasts, top with the sun-dried tomatoes, garnish with the reserved oil, and top with the remaining mozzarella cheese.
- Cover loosely with foil and bake at 400 for 20 minutes, then remove the foil and continue baking until the chicen is done.
- Plate, garnish with the parsley, and serve hot.
