Baked Tuscan Chicken Casserole

Instructions

  1. Beat together the cream cheese, heavy cream, 2 cl garlic, salt, onion powder, chili powder, pepper, Italian seasoning, Parimgiano, and 3/8 C mozzarella, then mix in the spinach.
  2. Lay the chicken breasts in a large greased baking dish, season with additional salt and pepper and the remaining garlic. Spread the cheese mixture on the breasts, top with the sun-dried tomatoes, garnish with the reserved oil, and top with the remaining mozzarella cheese.
  3. Cover loosely with foil and bake at 400 for 20 minutes, then remove the foil and continue baking until the chicen is done.
  4. Plate, garnish with the parsley, and serve hot.
